Coconut and Lime Shrimp Stir Fry (Salteado de Camarão de Coco e Limão)

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons coconut oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 can (14 oz) coconut milk
  • 2 tablespoons fresh lime juice
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Heat the coconut oil in a large pan or wok over medium-high heat.
  2. Add the bell peppers, onion, garlic, and ginger. Stir fry for 2-3 minutes until the vegetables are slightly tender.
  3. Push the vegetables to the side of the pan and add the shrimp. Cook for 2-3 minutes until the shrimp turn pink.
  4. Pour in the coconut milk and lime juice. Stir everything together and let it simmer for 3-4 minutes until the sauce thickens slightly.
  5. Season with salt and pepper to taste.
  6. Garnish with chopped cilantro and serve hot over steamed rice or with crusty bread.
