Coconut and Lime Shrimp Stir Fry (Salteado de Camarão de Coco e Limão)

Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons coconut oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 can (14 oz) coconut milk
- 2 tablespoons fresh lime juice
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Heat the coconut oil in a large pan or wok over medium-high heat.
- Add the bell peppers, onion, garlic, and ginger. Stir fry for 2-3 minutes until the vegetables are slightly tender.
- Push the vegetables to the side of the pan and add the shrimp. Cook for 2-3 minutes until the shrimp turn pink.
- Pour in the coconut milk and lime juice. Stir everything together and let it simmer for 3-4 minutes until the sauce thickens slightly.
- Season with salt and pepper to taste.
- Garnish with chopped cilantro and serve hot over steamed rice or with crusty bread.
