Ingredients
- 1 lb white fish fillets, cut into chunks
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 can (14 oz) coconut milk
- 1 cup fresh pineapple chunks
- 2 tablespoons curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the curry powder, turmeric, cumin, and paprika to the pot, and stir for 1-2 minutes to toast the spices.
- Add the red bell pepper and cook for another 2-3 minutes.
- Pour in the coconut milk and bring to a simmer.
- Add the fish chunks and pineapple chunks to the pot, and gently stir to combine. Season with salt and pepper.
- Cover the pot and let the curry simmer for 15-20 minutes, or until the fish is cooked through.
- Once the fish is cooked, taste and adjust the seasoning if needed.
- Serve the curry hot, garnished with fresh cilantro, and accompanied by steamed rice or crusty bread.
