Ingredients
- 2 lbs beef chuck, cut into chunks
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 can (14 oz) coconut milk
- 1 cup beef broth
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 teaspoon ground ginger
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, brown the beef chunks over medium-high heat.
- Add the sliced onion and minced garlic, and cook until fragrant.
- Pour in the coconut milk, beef broth, soy sauce, brown sugar, and ground ginger. Season with salt and pepper.
