Coconut Bread (faikakai)

Ingredients

  • 3 cups all-purpose flour
  • 1 cup sugar
  • 1 cup shredded coconut
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup melted butter
  • 1 cup coconut milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, mix together the flour, sugar, shredded coconut, baking powder, and salt.
  3. In a separate bowl, combine the melted butter, coconut milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 1 hour, or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
