Coconut Bread, also known as Faikakai, is a traditional Tongan delicacy that is loved for its rich coconut flavor and soft texture. This recipe is a perfect way to experience the flavors of Tongan cuisine.
Ingredients
- 3 cups all-purpose flour
- 1 cup sugar
- 1 cup shredded coconut
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup melted butter
- 1 cup coconut milk
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.
- In a large bowl, mix together the flour, sugar, shredded coconut, baking powder, and salt.
- In a separate bowl, combine the melted butter, coconut milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 1 hour, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
