Coconut Caramel Flan

Ingredients

  • 1 cup sugar
  • 1/4 cup water
  • 4 eggs
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (13.5 oz) coconut milk
  • 1 teaspoon vanilla extract

Instructions

  1. In a saucepan, combine the sugar and water. Cook over medium heat, swirling the pan occasionally, until the sugar caramelizes and turns a deep amber color.
  2. Pour the caramel into a 9-inch round baking dish, tilting the dish to coat the bottom evenly. Set aside to cool and harden.
  3. Preheat the oven to 350°F (175°C).
  4. In a bowl, whisk the eggs, sweetened condensed milk, coconut milk, and vanilla extract until well combined.
  5. Pour the mixture over the hardened caramel in the baking dish.
  6. Place the baking dish in a larger roasting pan. Fill the roasting pan with hot water halfway up the sides of the baking dish.
  7. Bake for 50-60 minutes, or until the flan is set but still slightly jiggly in the center.
  8. Remove the baking dish from the water bath and let it cool to room temperature. Then, refrigerate for at least 4 hours or overnight.
  9. To serve, run a knife around the edge of the flan and invert it onto a serving plate. The caramel will create a luscious sauce over the top of the flan.
