Coconut Crab Curry

Ingredients

  • 1 kg fresh crab meat
  • 2 cups coconut milk
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red chili, sliced
  • 1 tsp turmeric powder
  • 1 tsp curry powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp ginger, grated
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and red chili. Sauté until the onion is soft and translucent.
  2. Add the turmeric, curry powder, cumin, coriander, and grated ginger to the pot. Stir well to combine the spices with the onion mixture.
  3. Pour in the coconut milk and bring the mixture to a gentle simmer.
  4. Add the fresh crab meat to the pot and gently stir to coat the crab with the coconut milk and spices. Season with salt to taste.
  5. Cover the pot and let the curry simmer for 30-35 minutes, stirring occasionally, until the crab is cooked through and the flavors have melded together.
  6. Once the curry is ready, garnish with fresh coriander leaves and serve hot with steamed rice or crusty bread.
