Coconut Curry Chicken With Sweet Potato Mash

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons curry powder
  • 1 can (14 oz) coconut milk
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 large sweet potatoes, peeled and cubed
  • 4 tablespoons butter
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, heat some oil over medium-high heat. Season the chicken breasts with salt, pepper, and 1 tablespoon of curry powder. Sear the chicken for 5-6 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.

  6. Serve the coconut curry chicken over the sweet potato mash, garnished with fresh cilantro.
