Coconut Curry (faikakai Lu)

Ingredients

  • 1 lb chicken, cut into bite-sized pieces
  • 2 cups coconut milk
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 2 cups cooked white rice, for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  2. Add the chicken pieces to the pot and cook until they are no longer pink.
  3. Stir in the curry powder, turmeric, cumin, and paprika, and cook for 2 minutes to toast the spices.
  4. Pour in the coconut milk and add the sliced red bell pepper. Season with salt and black pepper, then bring the curry to a simmer.
  5. Cover the pot and let the curry simmer for 30 minutes, stirring occasionally.
  6. Serve the coconut curry over cooked white rice and enjoy!
