Coconut Curry (faikakai Lu)
Coconut Curry (Faikakai lu) is a traditional Tongan dish that is rich in flavor and warmth. This creamy and aromatic curry is a staple in Tongan cuisine and is perfect for a cozy family dinner or a special occasion.
Ingredients
- 1 lb chicken, cut into bite-sized pieces
- 2 cups coconut milk
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp vegetable oil
- 2 cups cooked white rice, for serving
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the chicken pieces to the pot and cook until they are no longer pink.
- Stir in the curry powder, turmeric, cumin, and paprika, and cook for 2 minutes to toast the spices.
- Pour in the coconut milk and add the sliced red bell pepper. Season with salt and black pepper, then bring the curry to a simmer.
- Cover the pot and let the curry simmer for 30 minutes, stirring occasionally.
- Serve the coconut curry over cooked white rice and enjoy!
