Coconut Curry Goat

Ingredients

  • 2 lbs goat meat, cut into chunks
  • 2 tablespoons curry powder
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 can coconut milk
  • 2 cups chicken broth
  • 2 potatoes, peeled and diced
  • 1 scotch bonnet pepper, whole
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the curry powder and cook for 1-2 minutes until fragrant.
  3. Add the onion, garlic, and ginger, and cook until the onion is soft.
  4. Add the goat meat to the pot and brown on all sides.
  5. Pour in the coconut milk and chicken broth, then add the scotch bonnet pepper.
  6. Bring the mixture to a boil, then reduce the heat and let it simmer for 1.5 hours, stirring occasionally.
  7. Add the diced potatoes to the pot and continue to simmer for another 30 minutes or until the meat is tender and the potatoes are cooked through.
  8. Season with salt and pepper to taste.
  9. Serve the Coconut Curry Goat hot with rice or roti.
