Coconut Curry Goat

Ingredients
- 2 lbs goat meat, cut into chunks
- 2 tablespoons curry powder
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 can coconut milk
- 2 cups chicken broth
- 2 potatoes, peeled and diced
- 1 scotch bonnet pepper, whole
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the curry powder and cook for 1-2 minutes until fragrant.
- Add the onion, garlic, and ginger, and cook until the onion is soft.
- Add the goat meat to the pot and brown on all sides.
- Pour in the coconut milk and chicken broth, then add the scotch bonnet pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 1.5 hours, stirring occasionally.
- Add the diced potatoes to the pot and continue to simmer for another 30 minutes or until the meat is tender and the potatoes are cooked through.
- Season with salt and pepper to taste.
- Serve the Coconut Curry Goat hot with rice or roti.
