This Coconut Curry Lentil Soup is a flavorful and comforting dish from Malagasy cuisine. It's a perfect blend of aromatic spices, creamy coconut milk, and hearty lentils, making it a satisfying and nutritious meal.
Ingredients
- 1 cup red lentils
- 1 can (14 oz) coconut milk
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1 tsp ground turmeric
- 4 cups vegetable broth
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
- Add the curry powder, ground cumin, and ground turmeric to the pot, and stir for 1-2 minutes to toast the spices.
- Rinse the red lentils under cold water, then add them to the pot along with the vegetable broth. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the lentils are tender.
- Pour in the coconut milk and stir to combine. Simmer for an additional 5 minutes.
- Season the soup with salt and pepper to taste. Serve hot and enjoy!
