Coconut Curry Lentil Soup (Soupe de lentilles au curry et à la noix de coco)

Ingredients

  • 1 cup red lentils
  • 1 can (14 oz) coconut milk
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 4 cups vegetable broth
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  2. Add the curry powder, ground cumin, and ground turmeric to the pot, and stir for 1-2 minutes to toast the spices.
  3. Rinse the red lentils under cold water, then add them to the pot along with the vegetable broth. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the lentils are tender.
  4. Pour in the coconut milk and stir to combine. Simmer for an additional 5 minutes.
  5. Season the soup with salt and pepper to taste. Serve hot and enjoy!
