Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tbsp curry powder
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14 oz) coconut milk
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 2 tbsp chopped fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the onion and garlic, and sauté until the onion is translucent.
- Add the curry powder, turmeric, cumin, and paprika. Stir well to combine and cook for 2 minutes.
- Add the bell pepper and cook for another 2 minutes.
- Pour in the coconut milk and bring to a simmer.
- Add the shrimp and cook for 5-7 minutes, or until the shrimp is pink and cooked through.
- Season with salt and pepper to taste.
- Garnish with chopped cilantro before serving.
