Coconut Curry Shrimp Surprise

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp curry powder
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14 oz) coconut milk
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 2 tbsp chopped fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the onion and garlic, and sauté until the onion is translucent.
  3. Add the curry powder, turmeric, cumin, and paprika. Stir well to combine and cook for 2 minutes.
  4. Add the bell pepper and cook for another 2 minutes.
  5. Pour in the coconut milk and bring to a simmer.
  6. Add the shrimp and cook for 5-7 minutes, or until the shrimp is pink and cooked through.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped cilantro before serving.
