Ingredients
- 1 block of firm tofu, drained and cubed
- 2 tablespoons curry powder
- 1 can (14 oz) coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent.
- Add the curry powder and stir for 1-2 minutes to toast the spices.
- Add the cubed tofu and cook for 5-7 minutes, stirring occasionally.
- Pour in the coconut milk and bring the mixture to a simmer. Let it cook for another 5-7 minutes.
- Season with salt and pepper to taste.
- Serve the Coconut Curry Tofu over steamed rice or with naan bread.
