Ingredients

  • 1 block of firm tofu, drained and cubed
  • 2 tablespoons curry powder
  • 1 can (14 oz) coconut milk
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent.
  3. Add the curry powder and stir for 1-2 minutes to toast the spices.
  4. Add the cubed tofu and cook for 5-7 minutes, stirring occasionally.
