Ingredients

  • 1 bell pepper, sliced

Instructions

  5. Add the sliced carrots, diced eggplant, sliced bell pepper, and zucchini to the pot.
  6. Season with salt and pepper, then cover and simmer for 15-20 minutes, or until the vegetables are tender.
