Ingredients
- 1 tbsp vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 can (400ml) coconut milk
- 2 carrots, sliced
- 1 eggplant, diced
- 1 bell pepper, sliced
- 1 zucchini, sliced
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until softened.
- Stir in the curry powder and cook for 1-2 minutes.
- Pour in the coconut milk and bring to a simmer.
- Add the sliced carrots, diced eggplant, sliced bell pepper, and zucchini to the pot.
- Season with salt and pepper, then cover and simmer for 15-20 minutes, or until the vegetables are tender.
- Serve the Coconut Curry Vegetables hot with rice or crusty bread.
