Coconut Curry with Vegetables (Curry de Légumes à la Noix de Coco)

Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 2 teaspoons curry powder
  • 1 teaspoon ground turmeric
  • 1 can (14 oz) coconut milk
  • 2 cups mixed vegetables (such as bell peppers, carrots, and green beans), chopped
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onions are soft and translucent.
