Ingredients
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon ginger, grated
- 2 teaspoons curry powder
- 1 teaspoon ground turmeric
- 1 can (14 oz) coconut milk
- 2 cups mixed vegetables (such as bell peppers, carrots, and green beans), chopped
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté until the onions are soft and translucent.
- Stir in the curry powder and ground turmeric, and cook for 1-2 minutes to toast the spices.
- Pour in the coconut milk and stir to combine with the spices and aromatics.
- Add the mixed vegetables to the pot and simmer for 15-20 minutes, or until the vegetables are tender.
- Season with salt and pepper to taste.
