Coconut Flan (Flan à la noix de coco)
Flan à la noix de coco, or Coconut Flan, is a delicious dessert from French Guiana that combines the creamy texture of flan with the tropical flavor of coconut.
Ingredients
- 4 eggs
- 1 can (14 oz) sweetened condensed milk
- 1 can (13.5 oz) coconut milk
- 1 teaspoon vanilla extract
- 1/2 cup shredded coconut
- 1/2 cup sugar
Instructions
- In a saucepan, caramelize the sugar over medium heat until it turns into a golden brown liquid.
- Pour the caramelized sugar into the bottom of a flan mold or individual ramekins, swirling to coat the bottom evenly.
- In a bowl, whisk together the eggs, sweetened condensed milk, coconut milk, and vanilla extract until well combined.
- Stir in the shredded coconut and pour the mixture into the flan mold or ramekins over the caramel.
- Cover the mold or ramekins with aluminum foil and place them in a large pot. Fill the pot with enough water to reach halfway up the sides of the mold or ramekins.
- Bring the water to a gentle boil, then reduce the heat and let the flan steam for 45 minutes.
- Remove the flan from the pot and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight.
- To serve, run a knife around the edge of the flan and invert it onto a plate to unmold. The caramel will create a delicious sauce for the flan.
