Flan à la noix de coco, or Coconut Flan, is a delicious dessert from French Guiana that combines the creamy texture of flan with the tropical flavor of coconut.

Coconut Flan (Flan à la noix de coco)

Ingredients

  • 4 eggs
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (13.5 oz) coconut milk
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut
  • 1/2 cup sugar

Instructions

  1. In a saucepan, caramelize the sugar over medium heat until it turns into a golden brown liquid.
  2. Pour the caramelized sugar into the bottom of a flan mold or individual ramekins, swirling to coat the bottom evenly.
  3. In a bowl, whisk together the eggs, sweetened condensed milk, coconut milk, and vanilla extract until well combined.
  4. Stir in the shredded coconut and pour the mixture into the flan mold or ramekins over the caramel.
  5. Cover the mold or ramekins with aluminum foil and place them in a large pot. Fill the pot with enough water to reach halfway up the sides of the mold or ramekins.
  6. Bring the water to a gentle boil, then reduce the heat and let the flan steam for 45 minutes.
  7. Remove the flan from the pot and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight.
  8. To serve, run a knife around the edge of the flan and invert it onto a plate to unmold. The caramel will create a delicious sauce for the flan.
