Ingredients
- 1.5 lb chicken breast, cut into cubes
- 1 can (14 oz) coconut milk
- 2 stalks lemongrass, finely chopped
- 3 cloves garlic, minced
- 1 tsp ginger, grated
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1/4 cup shredded coconut
- Salt and pepper to taste
- Wooden skewers, soaked in water
Instructions
- In a bowl, combine coconut milk, lemongrass, garlic, ginger, soy sauce, brown sugar, shredded coconut, salt, and pepper. Mix well to make the marinade.
- Add the chicken cubes to the marinade and let it marinate for at least 1 hour in the refrigerator.
- Thread the marinated chicken cubes onto the soaked wooden skewers.
- Heat a grill or grill pan over medium heat. Grill the chicken skewers for about 6-8 minutes on each side, or until fully cooked and slightly charred.
