Coconut Lime Beef Stir-fry

Ingredients

  • 1 lb beef, thinly sliced
  • 1 cup coconut milk
  • 2 limes, juiced and zested
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 1 cup snap peas
  • 2 tbsp soy sauce
  • 2 tbsp fish sauce
  • 2 tbsp brown sugar
  • 1/2 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the coconut milk, lime juice, lime zest, garlic, soy sauce, fish sauce, and brown sugar. Set aside.
  2. Heat a large skillet or wok over high heat. Add the beef and stir-fry for 2-3 minutes until browned. Remove the beef from the skillet and set aside.
  3. In the same skillet, add the onion, bell pepper, and snap peas. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.
  4. Return the beef to the skillet and pour the coconut milk mixture over the beef and vegetables. Cook for an additional 2-3 minutes, stirring constantly, until the sauce thickens slightly.
  5. Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
