Ingredients
- 1 lb fresh white fish fillets, diced
- 1 cup coconut milk
- 1/2 cup fresh lime juice
- 1/2 red onion, finely chopped
- 1/2 cup diced red bell pepper

- 1 jalapeño, seeded and finely chopped
- Salt and pepper to taste
Instructions
- In a large glass or ceramic bowl, combine the diced fish, coconut milk, and lime juice. Make sure the fish is fully submerged in the liquid. Cover and refrigerate for 2-3 hours, stirring occasionally.
- Once the fish is opaque and has a firm texture, drain off most of the liquid.
- Add the red onion, red bell pepper, cilantro, and jalapeño to the fish. Season with salt and pepper, and gently toss to combine.
- Chill the ceviche for an additional 30 minutes before serving.
