Coconut Lime Ceviche

Ingredients

  • 1 lb fresh white fish fillets, diced
  • 1 cup coconut milk
  • 1/2 cup fresh lime juice
  • 1/2 red onion, finely chopped
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped cilantro
  • 1 jalapeño, seeded and finely chopped
  • Salt and pepper to taste

Instructions

  1. In a large glass or ceramic bowl, combine the diced fish, coconut milk, and lime juice. Make sure the fish is fully submerged in the liquid. Cover and refrigerate for 2-3 hours, stirring occasionally.
  2. Once the fish is opaque and has a firm texture, drain off most of the liquid.
  3. Add the red onion, red bell pepper, cilantro, and jalapeño to the fish. Season with salt and pepper, and gently toss to combine.
  4. Chill the ceviche for an additional 30 minutes before serving.
