Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup coconut milk
  • 2 limes, juiced and zested
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. In a bowl, combine the coconut milk, lime juice and zest, minced garlic, cumin, paprika, salt, and pepper.
  2. Add the chicken breasts to the marinade, making sure they are well coated. Marinate for at least 30 minutes.
  3. Heat a skillet over medium heat and add the marinated chicken breasts. Cook for 6-7 minutes on each side, or until the chicken is cooked through.
  4. Sprinkle the chopped cilantro over the cooked chicken before serving.
