Kookose-laimikana, also known as Coconut Lime Chicken, is a flavorful and aromatic dish from Dominica Cuisine. The combination of coconut and lime creates a refreshing and tropical flavor that pairs perfectly with the tender chicken.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup coconut milk
- 2 limes, juiced and zested
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons chopped fresh cilantro
Instructions
- In a bowl, combine the coconut milk, lime juice and zest, minced garlic, cumin, paprika, salt, and pepper.
- Add the chicken breasts to the marinade, making sure they are well coated. Marinate for at least 30 minutes.
- Heat a skillet over medium heat and add the marinated chicken breasts. Cook for 6-7 minutes on each side, or until the chicken is cooked through.
- Sprinkle the chopped cilantro over the cooked chicken before serving.
