Coconut Lime Chicken Lettuce Wraps

Ingredients

  • 1 lb chicken breast, diced
  • 1 cup coconut milk
  • 2 limes, juiced
  • 1/4 cup cilantro, chopped
  • 1/4 cup red onion, diced
  • 1/4 cup bell pepper, diced
  • 1/4 cup shredded coconut
  • 1/4 cup peanuts, chopped
  • Salt and pepper to taste
  • 8 large lettuce leaves

Instructions

  1. In a bowl, combine the diced chicken, coconut milk, lime juice, cilantro, red onion, and bell pepper. Season with salt and pepper. Marinate for 15 minutes.
  2. Heat a skillet over medium heat. Add the marinated chicken and cook until the chicken is fully cooked, about 10-12 minutes.
  3. Once the chicken is cooked, remove from heat and stir in the shredded coconut and chopped peanuts.
  4. To assemble the lettuce wraps, place a spoonful of the chicken mixture onto each lettuce leaf. Roll up and secure with a toothpick.
