Coconut Lime Chicken (Pollo con Coco y Limón)

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup coconut milk
  • 2 limes, juiced and zested
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. In a bowl, mix the coconut milk, lime juice and zest, garlic, cumin, paprika, salt, and pepper.
  2. Add the chicken breasts to the marinade and let them sit for 10 minutes.
  3. Heat the olive oil in a skillet over medium-high heat.
  4. Add the chicken breasts and cook for 6-7 minutes on each side, or until fully cooked.
  5. Sprinkle with chopped cilantro before serving.
