Coconut Lime Chicken (Pollo con Coco y Limón)
Pollo con Coco y Limón, or Coconut Lime Chicken, is a popular dish in Nicaraguan cuisine that combines the tropical flavors of coconut and lime with tender chicken.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup coconut milk
- 2 limes, juiced and zested
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons chopped fresh cilantro
Instructions
- In a bowl, mix the coconut milk, lime juice and zest, garlic, cumin, paprika, salt, and pepper.
- Add the chicken breasts to the marinade and let them sit for 10 minutes.
- Heat the olive oil in a skillet over medium-high heat.
- Add the chicken breasts and cook for 6-7 minutes on each side, or until fully cooked.
- Sprinkle with chopped cilantro before serving.
