Coconut Lime Chicken Satay

Ingredients

  • 1.5 lbs chicken breast, cut into strips

  • 3 tbsp soy sauce
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tbsp brown sugar
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine coconut milk, soy sauce, lime juice, minced garlic, brown sugar, cumin, turmeric, and cayenne pepper. Mix well to make the marinade.
  2. Add the chicken strips to the marinade, making sure they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Thread the marinated chicken strips onto the soaked wooden skewers.
  4. Heat a grill or grill pan over medium-high heat. Cook the chicken skewers for 3-4 minutes on each side, or until fully cooked and slightly charred.
