These Coconut Lime Chicken Skewers are a delicious Bahamian dish that brings together the flavors of coconut and lime with tender chicken, perfect for a summer barbecue or a tropical-themed dinner.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup coconut milk
- 3 tablespoons fresh lime juice
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine the coconut milk, lime juice, garlic, cumin, paprika, salt, and black pepper. Mix well to create the marinade.
- Add the chicken cubes to the marinade, making sure they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken cubes onto the soaked wooden skewers.
