Coconut Lime Chicken Skewers

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup coconut milk
  • 3 tablespoons fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine the coconut milk, lime juice, garlic, cumin, paprika, salt, and black pepper. Mix well to create the marinade.
  2. Add the chicken cubes to the marinade, making sure they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
