Coconut Lime Chicken Stir-fry

Ingredients

  • 1 lb chicken breast, sliced
  • 2 tablespoons coconut oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 1/4 cup coconut milk
  • 2 limes, juiced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of coconut oil in a large skillet over medium-high heat.
  2. Add the sliced chicken and cook until browned, then remove from the skillet and set aside.
  3. Heat the remaining coconut oil in the skillet and add the bell peppers, snap peas, garlic, and ginger. Cook for 3-4 minutes.
  4. Return the chicken to the skillet and add the coconut milk, lime juice, salt, and pepper. Cook for an additional 2-3 minutes.
  5. Serve the stir-fry hot, garnished with lime wedges.
