Coconut Lime Chicken Stir-fry
This Coconut Lime Chicken Stir-Fry is a delicious and vibrant dish that brings the flavors of Wallis and Futuna cuisine to your kitchen.
Ingredients
- 1 lb chicken breast, sliced
- 2 tablespoons coconut oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 1/4 cup coconut milk
- 2 limes, juiced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of coconut oil in a large skillet over medium-high heat.
- Add the sliced chicken and cook until browned, then remove from the skillet and set aside.
- Heat the remaining coconut oil in the skillet and add the bell peppers, snap peas, garlic, and ginger. Cook for 3-4 minutes.
- Return the chicken to the skillet and add the coconut milk, lime juice, salt, and pepper. Cook for an additional 2-3 minutes.
- Serve the stir-fry hot, garnished with lime wedges.
