Ingredients

  • 4 fillets of white fish (such as snapper or cod)
  • 1 can (400ml) coconut milk
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 2 limes, juiced
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat some oil over medium heat. Add the sliced onion, bell pepper, garlic, and ginger. Sauté for 5 minutes until the vegetables are softened.
  2. Push the vegetables to the side of the skillet and add the red curry paste. Cook for 1-2 minutes to release the flavors.
  3. Pour in the coconut milk, fish sauce, and brown sugar. Stir to combine and bring to a simmer.
  4. Add the fish fillets to the skillet and spoon some of the curry sauce over them. Cover and cook for 8-10 minutes, or until the fish is cooked through.
  5. Stir in the lime juice and chopped cilantro. Season with salt and pepper to taste.
  6. Serve the Coconut Lime Fish Curry over steamed rice, garnished with extra cilantro and lime wedges.
