Coconut Lime Fish Tacos

Ingredients

  • 1 lb white fish fillets
  • 1 cup coconut milk
  • 2 limes, juiced and zested
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1/2 cup shredded cabbage

  • 1 avocado, sliced

Instructions

  1. In a shallow dish, combine coconut milk, lime juice and zest, cumin, chili powder, salt, and pepper. Add the fish fillets and marinate for 10 minutes.
  2. Heat a skillet over medium heat. Remove the fish from the marinade and cook for 3-4 minutes on each side, until flaky.
  3. Warm the corn tortillas in the skillet for about 30 seconds on each side.
  4. Assemble the tacos by placing flaked fish on each tortilla, topping with shredded cabbage, cilantro, and avocado slices.
  5. Serve the tacos with extra lime wedges on the side.
