Ingredients
- 2 cups coconut milk
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- Zest of 2 limes
- 2 tablespoons lime juice
- 2 teaspoons gelatin
- 2 tablespoons water
Instructions
- In a saucepan, combine the coconut milk, sugar, vanilla extract, lime zest, and lime juice. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling.
- In a small bowl, sprinkle the gelatin over the water and let it sit for 5 minutes to bloom.
- Once the coconut milk mixture is hot, remove it from the heat and stir in the bloomed gelatin until completely dissolved.
- Pour the mixture into 4 ramekins or serving glasses. Let them cool to room temperature, then cover and refrigerate for at least 4 hours, or until set.
- Before serving, garnish with additional lime zest or a slice of lime, if desired.
