Coconut Lime Panna Cotta

Ingredients

  • 2 cups coconut milk
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla extract
  • Zest of 2 limes
  • 2 tablespoons lime juice
  • 2 teaspoons gelatin
  • 2 tablespoons water

Instructions

  1. In a saucepan, combine the coconut milk, sugar, vanilla extract, lime zest, and lime juice. Heat over medium heat, stirring occasionally, until the mixture is hot but not boiling.
  2. In a small bowl, sprinkle the gelatin over the water and let it sit for 5 minutes to bloom.
  3. Once the coconut milk mixture is hot, remove it from the heat and stir in the bloomed gelatin until completely dissolved.
  4. Pour the mixture into 4 ramekins or serving glasses. Let them cool to room temperature, then cover and refrigerate for at least 4 hours, or until set.
  5. Before serving, garnish with additional lime zest or a slice of lime, if desired.
