Ingredients
- 2 cups of white rice
- 1 3/4 cups of coconut milk
- 1/2 cup of water
- 1 teaspoon of salt
- Zest of 1 lime
- 2 tablespoons of fresh lime juice
Instructions
- In a pot, combine the rice, coconut milk, water, and salt.
- Bring to a boil, then reduce the heat to low, cover, and simmer for 18 minutes.
- Remove from heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork and stir in the lime zest and lime juice.
