Coconut Lime Rice (Arroz con Coco y Limón)

Ingredients

  • 2 cups of white rice
  • 1 3/4 cups of coconut milk
  • 1/2 cup of water
  • 1 teaspoon of salt
  • Zest of 1 lime
  • 2 tablespoons of fresh lime juice

Instructions

  1. In a pot, combine the rice, coconut milk, water, and salt.
  2. Bring to a boil, then reduce the heat to low, cover, and simmer for 18 minutes.
  3. Remove from heat and let it sit, covered, for 5 minutes.
  4. Fluff the rice with a fork and stir in the lime zest and lime juice.
