Ingredients
- 4 salmon fillets
- 1/4 cup coconut milk
- 2 limes, juiced and zested
- Salt and pepper to taste
- 2 ripe mangoes, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and diced
Instructions
- In a bowl, mix the coconut milk, lime juice, and lime zest. Season the salmon fillets with salt and pepper, then pour the coconut lime mixture over the fillets. Let them marinate for 10 minutes.
- In another bowl, combine the diced mango, red onion, cilantro, and jalapeño to make the salsa. Set aside.
