Coconut Lime Shrimp And Vegetable Skewers

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 red onion, cut into chunks
  • 1/4 cup coconut milk
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine coconut milk, lime juice, garlic, cumin, salt, and pepper. Add the shrimp to the bowl and marinate for 15 minutes.
  2. Thread the marinated shrimp, bell peppers, zucchini, and red onion onto the soaked skewers.
