These Coconut Lime Shrimp and Vegetable Skewers are a delightful dish from Wallis and Futuna cuisine, combining the flavors of coconut and lime with succulent shrimp and fresh vegetables.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 zucchini, sliced
- 1 red onion, cut into chunks
- 1/4 cup coconut milk
- 2 tablespoons fresh lime juice
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Wooden skewers, soaked in water
Instructions
- In a bowl, combine coconut milk, lime juice, garlic, cumin, salt, and pepper. Add the shrimp to the bowl and marinate for 15 minutes.
- Thread the marinated shrimp, bell peppers, zucchini, and red onion onto the soaked skewers.
- Heat a grill pan or stovetop grill over medium-high heat. Grill the skewers for 2-3 minutes on each side, or until the shrimp is cooked through and the vegetables are tender.
