Coconut Lime Shrimp Skewers

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup coconut milk
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup shredded coconut
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine the coconut milk, lime juice, garlic, cumin, salt, and pepper. Add the shrimp to the bowl and toss to coat. Marinate for 15 minutes.
