Coconut Milk and Lemongrass Beef Stew (Babi Rica-rica)
Babi Rica-rica is a traditional dish from the Manado cuisine of Indonesia. This flavorful stew features tender beef cooked in a rich coconut milk and lemongrass broth, infused with aromatic spices and herbs.
Ingredients
- 500g beef, thinly sliced
- 2 cups coconut milk
- 3 lemongrass stalks, bruised
- 5 shallots, finely chopped
- 4 cloves garlic, minced
- 5 red chilies, finely chopped
- 1 tomato, diced
- 1 tsp turmeric powder
- 1 tsp salt
- 1 tsp sugar
- 2 cups water
Instructions
- In a large pot, combine coconut milk, lemongrass, shallots, garlic, chilies, tomato, turmeric powder, salt, and sugar.
- Bring the mixture to a simmer over medium heat.
- Add the sliced beef and water to the pot. Stir well to combine.
- Cover the pot and let the stew simmer for 1 hour, or until the beef is tender.
- Once the beef is cooked, remove the lemongrass stalks from the stew.
- Serve the Babi Rica-rica hot with steamed rice.
