Ingredients

  • 500g beef, thinly sliced
  • 2 cups coconut milk
  • 3 lemongrass stalks, bruised
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 5 red chilies, finely chopped
  • 1 tomato, diced
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 1 tsp sugar
  • 2 cups water

Instructions

  1. In a large pot, combine coconut milk, lemongrass, shallots, garlic, chilies, tomato, turmeric powder, salt, and sugar.
  2. Bring the mixture to a simmer over medium heat.
  3. Add the sliced beef and water to the pot. Stir well to combine.
  4. Cover the pot and let the stew simmer for 1 hour, or until the beef is tender.
  5. Once the beef is cooked, remove the lemongrass stalks from the stew.
  6. Serve the Babi Rica-rica hot with steamed rice.
