Coconut Milk and Lemongrass Chicken Curry (Ayam Rica-rica)
Ayam Rica-rica is a traditional spicy chicken dish from the Manado cuisine of Indonesia. This recipe features tender chicken cooked in a rich and aromatic coconut milk and lemongrass curry sauce, packed with bold and vibrant flavors.
Ingredients
- 1 kg chicken, cut into pieces
- 2 lemongrass stalks, bruised
- 400ml coconut milk
- 5 shallots, finely chopped
- 4 cloves garlic, minced
- 5 red chilies, finely chopped
- 1 tomato, diced
- 1 tsp tamarind paste
- 1 tsp sugar
- Salt to taste
- 2 tbsp oil
Instructions
- Heat oil in a pan and sauté the shallots, garlic, and chilies until fragrant.
- Add the chicken pieces and cook until they change color.
- Pour in the coconut milk, add lemongrass, tomato, tamarind paste, sugar, and salt. Simmer for 30 minutes.
- Once the chicken is tender and the sauce has thickened, remove from heat and serve hot.
