Ayam Rica-rica is a traditional spicy chicken dish from the Manado cuisine of Indonesia. This recipe features tender chicken cooked in a rich and aromatic coconut milk and lemongrass curry sauce, packed with bold and vibrant flavors.

Coconut Milk and Lemongrass Chicken Curry (Ayam Rica-rica)

Ingredients

  • 1 kg chicken, cut into pieces
  • 2 lemongrass stalks, bruised
  • 400ml coconut milk
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 5 red chilies, finely chopped
  • 1 tomato, diced
  • 1 tsp tamarind paste
  • 1 tsp sugar
  • Salt to taste
  • 2 tbsp oil

Instructions

  1. Heat oil in a pan and sauté the shallots, garlic, and chilies until fragrant.
  2. Add the chicken pieces and cook until they change color.
  3. Pour in the coconut milk, add lemongrass, tomato, tamarind paste, sugar, and salt. Simmer for 30 minutes.
  4. Once the chicken is tender and the sauce has thickened, remove from heat and serve hot.
