Ingredients
- 500g pork belly, cut into cubes
- 2 lemongrass stalks, bruised and chopped
- 4 shallots, finely chopped
- 5 cloves garlic, minced
- 3 red chilies, finely chopped
- 1 tomato, diced
- 2 cups coconut milk
- 1 tsp tamarind paste
- 1 tsp sugar
- Salt to taste
- 2 tbsp oil
Instructions
- Heat oil in a pan and sauté the shallots, garlic, and chilies until fragrant.

- Stir in the lemongrass, tomato, tamarind paste, sugar, and salt. Cook for a few minutes.
