Coconut Milk and Lemongrass Seafood Stew (Kepiting Rica-rica)
Kepiting Rica-rica is a traditional spicy seafood stew from Manado cuisine, known for its rich flavors and aromatic spices. This dish is a perfect combination of fresh seafood, creamy coconut milk, and the fragrant aroma of lemongrass.
Ingredients
- 500g crab, cleaned and cut into pieces
- 400ml coconut milk
- 4-5 kaffir lime leaves
- 3 lemongrass stalks, bruised
- 5 shallots, finely chopped
- 4 cloves garlic, minced
- 3 red chilies, sliced
- 1 tomato, diced
- 1 teaspoon tamarind paste
- 1 teaspoon sugar
- Salt to taste
- Water
Instructions
- In a large pot, heat some oil over medium heat. Sauté the shallots, garlic, and chilies until fragrant.
- Add the crab pieces and cook for 5 minutes.
- Pour in the coconut milk and add the lemongrass, kaffir lime leaves, and tomato. Stir well.
- Dilute the tamarind paste in a little water and add it to the pot. Season with sugar and salt.
- Simmer for 15-20 minutes until the crab is cooked and the flavors have melded together.
- Serve hot with steamed rice.
