Ingredients

  • 2 tbsp fish sauce
  • 2 tbsp sugar
  • 1/2 tsp black pepper
  • 1/4 cup water
  • Green onions, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, cook the pork belly over medium heat until the fat is rendered and the meat is slightly browned.
  2. Add the shallots and garlic to the pot and cook until fragrant.
  3. Pour in the coconut milk, fish sauce, sugar, black pepper, and water. Stir to combine.
  4. Bring the mixture to a simmer, then reduce the heat to low and cover the pot. Let the pork braise for 1.5 to 2 hours, or until the meat is tender and the sauce has thickened.
