Coconut Milk Chicken Curry

Ingredients

  • 1.5 lbs chicken, cut into pieces
  • 1 cup coconut milk
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 2 green chilies, slit
  • 1 inch ginger, grated
  • 4 cloves garlic, minced
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/2 tsp cumin seeds
  • 1/2 tsp garam masala
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  2. Add ginger and garlic, and sauté for a minute. Then, add the tomato puree and cook until the oil separates.
  3. Now, add turmeric, red chili powder, and coriander powder. Cook for a couple of minutes.
  4. Add the chicken pieces and green chilies. Cook until the chicken is sealed and the spices coat the pieces well.
  5. Pour in the coconut milk and season with salt. Cover and simmer for 20-25 minutes until the chicken is cooked through.
  6. Sprinkle garam masala and garnish with fresh cilantro before serving.
