Coconut Milk Chicken Curry
Coconut Milk Chicken Curry is a classic South Indian dish that is known for its rich and aromatic flavors. This creamy and mildly spiced curry is a perfect comfort food that pairs well with steamed rice or naan.
Ingredients
- 1.5 lbs chicken, cut into pieces
- 1 cup coconut milk
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 2 green chilies, slit
- 1 inch ginger, grated
- 4 cloves garlic, minced
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1/2 tsp cumin seeds
- 1/2 tsp garam masala
- 2 tbsp vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add ginger and garlic, and sauté for a minute. Then, add the tomato puree and cook until the oil separates.
- Now, add turmeric, red chili powder, and coriander powder. Cook for a couple of minutes.
- Add the chicken pieces and green chilies. Cook until the chicken is sealed and the spices coat the pieces well.
- Pour in the coconut milk and season with salt. Cover and simmer for 20-25 minutes until the chicken is cooked through.
- Sprinkle garam masala and garnish with fresh cilantro before serving.
