Coconut Rice Adventure (Nasi Uduk Adventure) is a traditional Javanese dish that features fragrant coconut rice served with a variety of flavorful accompaniments.
Ingredients
- 2 cups jasmine rice
- 1 3/4 cups coconut milk
- 1 pandan leaf, tied in a knot
- 1 lemongrass stalk, bruised
- 1 tsp salt
- 1/2 cup fried shallots, for garnish
- 4 hard-boiled eggs, halved
- 1 cucumber, sliced
- 1 cup shredded coconut, toasted
- 1 cup sambal (chili paste), for serving
Instructions
- In a pot, combine the rice, coconut milk, pandan leaf, lemongrass, and salt.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and remove the pandan leaf and lemongrass.
- Serve the coconut rice with fried shallots, hard-boiled eggs, sliced cucumber, toasted shredded coconut, and sambal.
