Ingredients

  • 2 cups jasmine rice
  • 1 3/4 cups coconut milk
  • 1 pandan leaf, tied in a knot
  • 1 lemongrass stalk, bruised
  • 1 tsp salt
  • 1/2 cup fried shallots, for garnish
  • 4 hard-boiled eggs, halved
  • 1 cucumber, sliced
  • 1 cup shredded coconut, toasted
  • 1 cup sambal (chili paste), for serving

Instructions

  1. In a pot, combine the rice, coconut milk, pandan leaf, lemongrass, and salt.
  2. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  3. Fluff the rice with a fork and remove the pandan leaf and lemongrass.
  4. Serve the coconut rice with fried shallots, hard-boiled eggs, sliced cucumber, toasted shredded coconut, and sambal.
