Coconut Rice (betawi Nasi Uduk)

Ingredients

  • 2 cups jasmine rice
  • 1 3/4 cups coconut milk
  • 2 pandan leaves, tied in a knot
  • 1 lemongrass stalk, bruised
  • 1 tsp salt

Instructions

  1. Rinse the jasmine rice until the water runs clear, then drain.
  2. In a pot, combine the rinsed rice, coconut milk, pandan leaves, lemongrass, and salt.
  3. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  4. Remove the pot from the heat and let it sit, covered, for 5 minutes.
  5. Fluff the rice with a fork and discard the pandan leaves and lemongrass before serving.
