Coconut Rice, also known as Betawi Nasi Uduk, is a popular dish in Betawi cuisine. It is a fragrant and flavorful rice dish cooked in coconut milk and served with various side dishes.
Ingredients
- 2 cups jasmine rice
- 1 3/4 cups coconut milk
- 2 pandan leaves, tied in a knot
- 1 lemongrass stalk, bruised
- 1 tsp salt
Instructions
- Rinse the jasmine rice until the water runs clear, then drain.
- In a pot, combine the rinsed rice, coconut milk, pandan leaves, lemongrass, and salt.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
- Remove the pot from the heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork and discard the pandan leaves and lemongrass before serving.
