Ingredients
- 2 cups jasmine rice
- 1 3/4 cups coconut milk
- 1 pandan leaf, tied in a knot
- 1 teaspoon salt
- 4 hard-boiled eggs, halved
- 1 cucumber, sliced
- 1 cup fried anchovies
- 1 cup roasted peanuts
- Sambal (spicy chili paste), for serving
Instructions
- Rinse the jasmine rice until the water runs clear, then drain.
- In a pot, combine the rinsed rice, coconut milk, pandan leaf, and salt. Bring to a boil.
- Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and discard the pandan leaf.
- Serve the coconut rice with hard-boiled eggs, sliced cucumber, fried anchovies, roasted peanuts, and sambal.
