Coconut Rice (nasi Liwet)

Ingredients

  • 2 cups jasmine rice
  • 1 3/4 cups coconut milk
  • 1 1/2 cups water
  • 2 pandan leaves, tied in a knot
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp sugar

Instructions

  1. Rinse the jasmine rice until the water runs clear, then drain.
  2. In a pot, combine the coconut milk, water, pandan leaves, garlic, salt, and sugar. Bring to a simmer over medium heat.
  3. Add the rinsed rice to the pot and stir well. Cover and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  4. Fluff the rice with a fork and remove the pandan leaves before serving.
