Ingredients
- 2 cups of jasmine rice
- 1 can of coconut milk
- 1 1/2 cups of water
- 1 teaspoon of salt
- 8 chicken drumsticks
- 1 cup of all-purpose flour
- 1 teaspoon of paprika
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1/2 teaspoon of black pepper
- Vegetable oil for frying
Instructions
- In a large pot, combine the jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- While the rice is cooking, prepare the chicken. In a shallow dish, mix the flour, paprika, garlic powder, onion powder, and black pepper. Dredge the chicken drumsticks in the flour mixture until evenly coated.
- Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken drumsticks until golden brown and cooked through, about 12-15 minutes.
- Once the rice is cooked, fluff it with a fork and serve alongside the fried chicken.
