Coconut Rice With Fried Chicken

Ingredients

  • 2 cups of jasmine rice
  • 1 can of coconut milk
  • 1 1/2 cups of water
  • 1 teaspoon of salt
  • 8 chicken drumsticks
  • 1 cup of all-purpose flour
  • 1 teaspoon of paprika
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1/2 teaspoon of black pepper
  • Vegetable oil for frying

Instructions

  1. In a large pot, combine the jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  2. While the rice is cooking, prepare the chicken. In a shallow dish, mix the flour, paprika, garlic powder, onion powder, and black pepper. Dredge the chicken drumsticks in the flour mixture until evenly coated.
  3. Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken drumsticks until golden brown and cooked through, about 12-15 minutes.
  4. Once the rice is cooked, fluff it with a fork and serve alongside the fried chicken.
