Ingredients

  • 2 cups jasmine rice
  • 1 3/4 cups coconut milk
  • 2 pandan leaves, tied in a knot
  • 1 lemongrass stalk, bruised
  • 1 inch galangal, bruised
  • 1 tsp salt
  • 1/2 tsp sugar

Instructions

  1. Rinse the jasmine rice until the water runs clear.
  2. In a pot, combine the rice, coconut milk, pandan leaves, lemongrass, galangal, salt, and sugar.
  3. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  4. Fluff the rice with a fork and remove the pandan leaves, lemongrass, and galangal before serving.
