Ingredients
- 2 cups jasmine rice
- 1 3/4 cups coconut milk
- 1 pandan leaf, tied in a knot
- 1 teaspoon salt
- 1 whole chicken, cut into pieces
- 2 tablespoons ginger-garlic paste
- 1 tablespoon chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Oil for frying
- Sliced cucumbers and hard-boiled eggs, for serving
Instructions
- Rinse the jasmine rice until the water runs clear. Drain the rice.
- In a pot, combine the rinsed rice, coconut milk, pandan leaf, and salt. Cook the rice according to your rice cooker's instructions.
- Marinate the chicken pieces with ginger-garlic paste, chili powder, turmeric powder, coriander powder, cumin powder, salt, and black pepper. Let it marinate for at least 30 minutes.
- Heat oil in a frying pan over medium heat. Fry the marinated chicken pieces until they are golden brown and cooked through.
- Serve the coconut rice with the spiced fried chicken, sliced cucumbers, and hard-boiled eggs.
