Coconut Rice with Spicy Shrimp (Riz au lait de coco avec crevettes pimentées)

Ingredients

  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup water
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red chili, thinly sliced
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a pot, combine the jasmine rice, coconut milk, and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  2. While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion, garlic, and red chili. Sauté for 2-3 minutes until the onion is translucent.
  3. Add the shrimp to the skillet and season with paprika, cayenne pepper, salt, and pepper. Cook for 4-5 minutes until the shrimp is pink and cooked through.
  4. Fluff the cooked coconut rice with a fork and transfer to serving plates. Top with the spicy shrimp and garnish with fresh cilantro.
