Coconut Rice With Tuna Curry (nasi Dagang)

Ingredients

  • 2 cups jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon tamarind paste
  • 2 tablespoons fish curry powder
  • 400g canned tuna, drained
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 stalks lemongrass, smashed
  • 4 kaffir lime leaves
  • 1/2 cup coconut cream
  • 3 tablespoons vegetable oil

Instructions

  1. In a pot, combine jasmine rice, coconut milk, water, salt, and sugar. Cook the rice according to your rice cooker or stovetop method.
  2. In a separate pan, heat vegetable oil over medium heat. Sauté the sliced onion, minced garlic, lemongrass, and kaffir lime leaves until fragrant.
  3. Add fish curry powder and tamarind paste to the pan, and stir until the spices are aromatic.
  4. Add the drained tuna to the pan and cook for 5 minutes, stirring gently to coat the tuna with the spices.
  5. Pour in the coconut cream and simmer for another 5 minutes until the curry thickens.
  6. Serve the coconut rice with the tuna curry on top. Enjoy!
