Coconut Shrimp Curry

Ingredients

  • 1 pound of shrimp, peeled and deveined
  • 1 tablespoon of vegetable oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 tablespoon of curry powder
  • 1 can of coconut milk
  • 1 red bell pepper, sliced
  • 1 cup of frozen peas
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. Sprinkle the curry powder over the onion and garlic, and stir to combine.
  4. Pour in the coconut milk and bring the mixture to a simmer.

  6. Add the shrimp to the skillet and cook until they turn pink and opaque.
