Ingredients
- 1 pound shrimp, peeled and deveined
- 2 cups cooked white rice
- 1 cup coconut milk
- 1 red bell pepper, diced
- 1 cup frozen peas
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- Salt and pepper to taste
Instructions
- In a large wok or skillet, heat vegetable oil over medium-high heat.
- Add the shrimp and cook until pink, then remove from the wok and set aside.
- In the same wok, add garlic, ginger, and red bell pepper, and sauté for 2-3 minutes.
- Stir in the cooked rice, coconut milk, soy sauce, and frozen peas. Cook for another 5-7 minutes, stirring frequently.
- Return the cooked shrimp to the wok and stir to combine with the rice mixture.
- Drizzle with sesame oil and season with salt and pepper to taste.
