Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 cups cooked white rice
  • 1 cup coconut milk
  • 1 red bell pepper, diced
  • 1 cup frozen peas
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • Salt and pepper to taste

Instructions

  1. In a large wok or skillet, heat vegetable oil over medium-high heat.
  2. Add the shrimp and cook until pink, then remove from the wok and set aside.
  3. In the same wok, add garlic, ginger, and red bell pepper, and sauté for 2-3 minutes.
  4. Stir in the cooked rice, coconut milk, soy sauce, and frozen peas. Cook for another 5-7 minutes, stirring frequently.
  5. Return the cooked shrimp to the wok and stir to combine with the rice mixture.
  6. Drizzle with sesame oil and season with salt and pepper to taste.
