Coconut Shrimp Stir-fry
Coconut Shrimp Stir-Fry is a popular dish in Mariana Islands cuisine, featuring succulent shrimp and vibrant vegetables in a flavorful coconut sauce.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup coconut milk
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup snap peas
- 1/2 cup shredded coconut
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 green onions, chopped
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a bowl, combine coconut milk, soy sauce, fish sauce, and brown sugar. Set aside.
- Heat vegetable oil in a large pan over medium heat. Add garlic, ginger, and shrimp. Cook until shrimp turn pink, then remove from the pan and set aside.
- In the same pan, add the bell peppers and snap peas. Stir-fry for 2-3 minutes.
- Pour the coconut milk mixture into the pan and bring to a simmer. Add the cooked shrimp back to the pan and stir to combine.
- Sprinkle shredded coconut and green onions over the stir-fry. Season with salt and pepper to taste.
- Serve the Coconut Shrimp Stir-Fry hot over steamed rice.
