Coconut Shrimp Stir-fry

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup coconut milk
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snap peas
  • 1/2 cup shredded coconut
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green onions, chopped
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine coconut milk, soy sauce, fish sauce, and brown sugar. Set aside.
  2. Heat vegetable oil in a large pan over medium heat. Add garlic, ginger, and shrimp. Cook until shrimp turn pink, then remove from the pan and set aside.
  3. In the same pan, add the bell peppers and snap peas. Stir-fry for 2-3 minutes.
  4. Pour the coconut milk mixture into the pan and bring to a simmer. Add the cooked shrimp back to the pan and stir to combine.
  5. Sprinkle shredded coconut and green onions over the stir-fry. Season with salt and pepper to taste.
  6. Serve the Coconut Shrimp Stir-Fry hot over steamed rice.
