Ingredients

  • 1 lb (450g) salted cod, soaked and flaked
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (120ml) milk
  • 2 eggs
  • 1/4 cup (15g) chopped parsley
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying

Instructions

  1. In a large bowl, mix together the flaked cod, flour, milk, eggs, parsley, baking powder, salt, and black pepper until well combined.
  2. Heat the vegetable oil in a deep skillet over medium heat.
  3. Scoop spoonfuls of the cod mixture and carefully drop them into the hot oil.
  4. Fry the fritters for 3-4 minutes per side, or until golden brown and crispy.
  5. Remove the fritters from the oil and drain on paper towels.
