Ingredients
- 1 lb (450g) salted cod, soaked and flaked
- 1 cup (125g) all-purpose flour
- 1/2 cup (120ml) milk
- 2 eggs
- 1/4 cup (15g) chopped parsley
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil for frying
Instructions
- In a large bowl, mix together the flaked cod, flour, milk, eggs, parsley, baking powder, salt, and black pepper until well combined.
- Heat the vegetable oil in a deep skillet over medium heat.
- Scoop spoonfuls of the cod mixture and carefully drop them into the hot oil.
- Fry the fritters for 3-4 minutes per side, or until golden brown and crispy.
- Remove the fritters from the oil and drain on paper towels.
- Serve the cod fritters hot, with your favorite dipping sauce or aioli.
